Cinnamon stick lend a warming character to ciders, holiday ales and pumpkin brews. Adding cinnamon sticks during the boil is not recommended as it extracts tannins creating an astringent flavor. It is recommend to use cinnamon stick in secondary fermentaion and leave in contact for a minimum of one week. It is always recommend to add the amount indicated in your recipe. Typical usage is 2-4 sticks.
